Easy Christmas tree cupcakes



Oh yeah, Christmas is just a few days away. But we are not ready for holidays yet. Today I just sent out a dozen of Christmas cards to friends on Lindsay's page, but I am still waiting for some packages that will be the Christmas gifts for our relatives in Taiwan. That's not all yet. I also need to get something from the mall for a Christmas event with our friends. A lot of shopping that seems to never end. 

Do you still send Christmas cards to your friends? With the expansive use of facebook and so many social networks, we actually have conversations with our oversea family and friends almost everyday on the net, so I wonder if people still send out Christmas cards with a family portrait or any tangible Christmas cards now. I am thinking to do the family portrait card this year, but Christmas is so close. Hopefully, I can still squeeze some time from my husband to make a shooting. But don't be surprised if you end up getting a Hallmark Christmas card.

OK, back to the business!

No matter how busy the holidays have got me, I am always happy to help my girl get into the holiday spirit too. We hung up the ornaments on the tree in our living room together and then it was a Christmas baking fun. Lindsay wanted Christmas cupcakes, so we came up with this. It's easy. I made the tree pieces out of white chocolate and let Lindsay put on the sprinkles. It's like an artwork that little kids can participate too. And Lindsay loves crafting.

Here is what you need:
1. Cupcake mix kit
2. baking sheet
3. Green food coloring
4. White chocolate (for baking)
5. Sprinkles
6. Whipped heavy cream


Directions:
1. Melt white chocolate in a bowl over heating water. (When the chocolate starts to melt, set the heat low)
2. Add food coloring when the chocolate is completely melted.
3. Pour a tablespoon of melted chocolate on the baking sheet and then shape it into a tree with the help of a chopstick or a spoon. It doesn't have to be perfect to be festive.
4. Decorate the trees with sprinkles.
5. Place the decorated chocolate trees in the refrigerator. (Keep them refrigerated until the cupcakes are ready)

6. Bake cupcakes as directed on the package.
7. Beat heavy cream with a mixer in low speed to make creamy frosty. (You can use icing if it's preferred)

8. Add some cream on the cupcakes when the cupcakes are completely cooled down.
9. Tuck the chocolate trees into the frosty. Then they are ready to serve.
