Roasted pumpkins and Buckelew Pumpkin Patch



It was a lot of fun picking our own fresh pumpkins from the pumpkin patch, but I started feeling a bit light-headed when I had no idea what to do with the pumpkin. They say that you carve the pumpkins to make jack-o-lanterns about one or two weeks before Halloween. I didn't have the chance to do the same because we visited the pumpkin patch at the last week in order to fit everyone's schedule. It was a new thing for us foreigners to do and each of our friends was excited to go as a whole big family.


So, what did I do to my pumpkin at last?

As I've said, I didn't carve it, so the only choice left for me is to cook it. An easy, simple way. I guess making a pumpkin pie is probably just a piece of cake for most American families. In spite of my love toward baking, I never make a pie crust myself and I couldn't fail since hubby and my girl were looking forward to having a pumpkin feast in two hours. 

Thanks to the immense number of recipes out in the cyber world, I quickly decided to make roasted pumpkins for one half and a pot of pumpkin soup for the other half. I am not going to share how I make my pumpkin soup in this blog because the soup is more common and because roasted pumpkins are so worthy blogging for its easy simple recipe.

As easy as you can imagine, I just sliced the pumpkins into about half inch thick. Then I greased the slices with Canola oil and sprinkled some brown sugar on one side. And this's it for the preparation.



I roasted the pumpkin slices in a temperature of 400F for 40 mins. When it's done cooking, I set them outside the oven for 5 mins. Then they were ready to serve. Forty mins cooking is actually much longer than I intended. If I get to make this again, I will cut it thinner. 


They tasted unbelievably yummy both fresh cooked and after refrigerated. And so easy that I am no longer terrified of putting pumpkins onto my shopping list now. The smell of roasted pumpkins makes the house so festive. If you haven't had it before, you should try it sooner before Winter starts peeking in.

We gave our girl a mission of looking for the smallest pumpkin. And she had fun.
